Mario Batali wants you to eat healthy without your bank account taking a serious hit. His new book, America-Farm to Table: Simple, Delicious Recipes Celebrating Local Farmers, is a collection of delectable dishes that can be cooked up with the aid of local farmers markets, allowing you to find the freshest ingredients without forking over extra cash for food shipped in from out of town.
For the book, Batali spoke with 14 farmers from around the country and, after hearing their stories, has come to one conclusion: they’re the future rock stars of the culinary world.
“For me they are going to be the next rock stars,” says Batali, who’s looking to expand his Eately franchise to Los Angeles in 2017. “I traveled around to find out what they were doing, what was their inspiration, what are their troubles, what are their trials and tribulations.”
“The stories that they have… when you taste food and it has a story behind it, it tastes twice as good,” he adds.
While small farms are finding some success, it’s the mid-sized farms that are taking a beating from the corporate farms. Despite the struggles, they keep producing the freshest food for the people in their area.
“They’re good people, they support the local community, and they’re really kind of bad asses,” says Batali.
